- 3–4 lb beef brisket
- 2 tbsp olive oil
- 2 tsp kosher salt
- 1 tsp black pepper
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp dried thyme
- 1/2 cup beef broth
- 1/4 cup Worcestershire sauce
- 2 tbsp balsamic vinegar
- 2 large onions, sliced
- 4–5 sprigs fresh thyme
- Mashed potatoes for serving
- Extra thyme for garnish
Instructions
- Season the brisket with salt, pepper, and spices. Heat oil in a skillet and sear the brisket on both sides until browned (about 3–4 minutes per side).
- Place sliced onions and thyme at the bottom of the slow cooker. Lay the brisket on top.
- In a small bowl, mix the beef broth, Worcestershire sauce, and balsamic vinegar. Pour this mixture over the brisket.
- Cover and cook on low for 8–10 hours, or on high for 5–6 hours, until the meat is fork-tender.
- Slice the brisket against the grain. Serve it over the onions with mashed potatoes and spoon the juices over the top. Garnish with fresh thyme.
Notes
Searing the beef enhances the flavor. Cooking on the low setting develops deeper flavors. Adjust spices to your preference.
