Ingredients

  • 2.53 lbs chuck roast (or beef shoulder)
  • 1 lb Yukon Gold potatoes, quartered
  • 1.5 cups chopped carrots
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tsp Italian seasoning
  • Salt & black pepper to taste
  • 2 tbsp olive oil
  • Optional: fresh parsley for garnish
  • For the Mash:
  • 2 cups mashed potatoes (homemade or instant)
  • 2 tbsp butter
  • 1/4 cup milk
  • Salt to taste

Instructions

  1. In a hot skillet, sear the beef on all sides with olive oil.
  2. Toss onions, garlic, carrots, and potatoes into your slow cooker or Dutch oven. Add the seared roast right on top.
  3. Pour in beef broth, Worcestershire sauce, and Italian seasoning. Add salt and pepper to taste. Cover and let it simmer low and slow.
  4. Cook on LOW for 480 minutes (8 hours) or HIGH for 240–300 minutes (4–5 hours) until the meat is tender.
  5. Whip up your buttery mashed potatoes.
  6. Serve the roast, veggies, and broth over the mashed potatoes.

Notes

Sear the beef well for added flavor. A variety of veggies can be used for a twist.
