Ingredients

- 2.5–3 lbs chuck roast (or beef shoulder)
- 1 lb Yukon Gold potatoes, quartered
- 1.5 cups chopped carrots
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 2 cups beef broth
- 2 tbsp Worcestershire sauce
- 2 tsp Italian seasoning
- Salt & black pepper to taste
- 2 tbsp olive oil
- Optional: fresh parsley for garnish
- For the Mash:
- 2 cups mashed potatoes (homemade or instant)
- 2 tbsp butter
- 1/4 cup milk
- Salt to taste
Instructions
- In a hot skillet, sear the beef on all sides with olive oil.
- Toss onions, garlic, carrots, and potatoes into your slow cooker or Dutch oven. Add the seared roast right on top.
- Pour in beef broth, Worcestershire sauce, and Italian seasoning. Add salt and pepper to taste. Cover and let it simmer low and slow.
- Cook on LOW for 480 minutes (8 hours) or HIGH for 240–300 minutes (4–5 hours) until the meat is tender.
- Whip up your buttery mashed potatoes.
- Serve the roast, veggies, and broth over the mashed potatoes.
Notes
Sear the beef well for added flavor. A variety of veggies can be used for a twist.
