Ingredients

- 1 lb chicken breast, sliced into strips
- 1/2 red bell pepper, sliced
- 1/2 green bell pepper, sliced
- 1/2 yellow bell pepper, sliced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- Salt & pepper to taste
- Juice of 1 lime (optional)
Instructions
- Toss chicken strips with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper.
- In a large skillet over medium-high heat, cook the chicken until golden and juicy.
- Add in the bell peppers and sauté for 5–7 minutes until tender-crisp.
- Finish with a splash of lime juice.
- Serve in tortillas, over rice, or on a salad.
Notes
For added flavor, marinate the chicken in the spices for at least 30 minutes before cooking. Feel free to add other vegetables like onions or zucchini.
