Ingredients

  • 1 lb chicken breast, sliced into strips
  • 1/2 red bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 1/2 yellow bell pepper, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • Juice of 1 lime (optional)

Instructions

  1. Toss chicken strips with olive oil, chili powder, cumin, paprika, garlic powder, salt, and pepper.
  2. In a large skillet over medium-high heat, cook the chicken until golden and juicy.
  3. Add in the bell peppers and sauté for 5–7 minutes until tender-crisp.
  4. Finish with a splash of lime juice.
  5. Serve in tortillas, over rice, or on a salad.

Notes

For added flavor, marinate the chicken in the spices for at least 30 minutes before cooking. Feel free to add other vegetables like onions or zucchini.
