Instructions
- Season the chicken breasts with olive oil, dried herbs, salt, and pepper.
- In a skillet over medium heat, cook the chicken until golden brown and cooked through, about 6-7 minutes per side. Remove from the skillet and let rest.
- In the same skillet, add the zucchini and sauté until tender, about 3-4 minutes.
- Meanwhile, cook the rice according to package instructions using chicken broth or water.
- Slice the chicken and serve over the zucchini rice. Enjoy!
Notes
Feel free to use other vegetables like bell peppers or carrots. For some heat, add red pepper flakes to the chicken seasoning.
