- 1 box white cake mix
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 teaspoon baking powder
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 cup milk
- 1 tablespoon vanilla extract
- 1/2 cup rainbow sprinkles
- 1/2 cup unsalted butter, softened (for frosting)
- 2 cups powdered sugar
- 2–3 tablespoons milk (for frosting)
- 1 teaspoon vanilla extract (for frosting)
- 1/4 cup rainbow sprinkles (for decoration)
Instructions
- Preheat your oven to the temperature specified on the cake mix box.
- In a large bowl, whisk together the cake mix, flour, sugar, and baking powder.
- In a separate bowl, mix the softened butter, eggs, milk, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix with a spatula until the batter is smooth. Do not overmix.
- Gently fold in the rainbow sprinkles.
- Pour the batter into two greased and floured 8-inch round cake pans.
- Bake according to the directions on the cake mix box, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
- To make the frosting, beat the softened butter until light and fluffy.
- Slowly add the powdered sugar, mixing until well combined.
- Add milk and vanilla extract until the frosting reaches a smooth consistency.
- Place one cake layer on a serving plate. Spread a layer of frosting on top.
- Place the second cake layer on top and frost the entire cake.
- Decorate with a generous amount of rainbow sprinkles.
Notes
Make sure your butter is softened, not melted, for the best texture. Store leftovers in an airtight container at room temperature for up to 3 days.
