  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar

  • 1/2 cup unsalted butter, softened
  • 3 large eggs
  • 1 cup milk
  • 1 tablespoon vanilla extract
  • 1/2 cup rainbow sprinkles
  • 1/2 cup unsalted butter, softened (for frosting)
  • 2 cups powdered sugar
  • 23 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1/4 cup rainbow sprinkles (for decoration)

Instructions

  1. Preheat your oven to the temperature specified on the cake mix box.
  2. In a large bowl, whisk together the cake mix, flour, sugar, and baking powder.
  3. In a separate bowl, mix the softened butter, eggs, milk, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix with a spatula until the batter is smooth. Do not overmix.
  5. Gently fold in the rainbow sprinkles.
  6. Pour the batter into two greased and floured 8-inch round cake pans.
  7. Bake according to the directions on the cake mix box, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for about 10 minutes before transferring them to a wire rack to cool completely.
  9. To make the frosting, beat the softened butter until light and fluffy.
  10. Slowly add the powdered sugar, mixing until well combined.
  11. Add milk and vanilla extract until the frosting reaches a smooth consistency.
  12. Place one cake layer on a serving plate. Spread a layer of frosting on top.
  13. Place the second cake layer on top and frost the entire cake.
  14. Decorate with a generous amount of rainbow sprinkles.

Notes

Make sure your butter is softened, not melted, for the best texture. Store leftovers in an airtight container at room temperature for up to 3 days.
