- 2 cups all-purpose or gluten-free flour
- 2 cups coconut sugar or granulated sugar
- 2/3 cup cocoa powder
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 1 cup almond milk (or other milk)
- 1 cup brewed coffee/espresso
- 1/2 cup oil of choice
- 2 tsp vanilla extract
- 3 cups whipped cream (or dairy-free whipped topping)
- Homemade cherry sauce
- Dark chocolate shavings/curls
Instructions
- Preheat your oven to 350°F (175°C). Grease two 8” or 9” round cake pans and line them with parchment paper.
- In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Stir in the almond milk, brewed coffee, oil, and vanilla. Mix until the batter is smooth.
- Pour the batter into the prepared pans and bake for 20-25 minutes. Allow the cakes to cool completely.
- Once cooled, place one cake layer on a serving plate. Top with cherry sauce and whipped cream. Repeat with the second layer.
- Garnish with fresh cherries and dark chocolate shavings.
- Keep the cake refrigerated until serving. Slice and enjoy.

Ensure all ingredients are at room temperature before starting. Use high-quality cocoa powder for a richer flavor.
