Ingredients

  • 2 cups all-purpose or gluten-free flour
  • 2 cups coconut sugar or granulated sugar
  • 2/3 cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup almond milk (or other milk)
  • 1 cup brewed coffee/espresso
  • 1/2 cup oil of choice
  • 2 tsp vanilla extract
  • 3 cups whipped cream (or dairy-free whipped topping)
  • Homemade cherry sauce
  • Dark chocolate shavings/curls

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 8” or 9” round cake pans and line them with parchment paper.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Stir in the almond milk, brewed coffee, oil, and vanilla. Mix until the batter is smooth.
  4. Pour the batter into the prepared pans and bake for 20-25 minutes. Allow the cakes to cool completely.
  5. Once cooled, place one cake layer on a serving plate. Top with cherry sauce and whipped cream. Repeat with the second layer.
  6. Garnish with fresh cherries and dark chocolate shavings.
  7. Keep the cake refrigerated until serving. Slice and enjoy.
