- 2 garlic cloves, minced
Instructions
- In a large pot, heat some olive oil over medium heat.
- Add the diced onion and minced garlic, and sauté until softened.
- Add the chicken breasts or thighs to the pot and brown on both sides.
- Pour in the chicken broth and bring to a simmer.
- Cook until the chicken is cooked through, about 20-25 minutes.
- Remove the chicken, shred it, and return it to the soup.
- Adjust seasoning and serve hot.
