Description

A delicious and hearty dish combining shrimp, spinach, and creamy cheeses, perfect for family dinners or special occasions.


Ingredients

  • 1214 pasta sheets (fresh or dried)
  • 1 pound large shrimp, peeled and deveined
  • 2 cups fresh spinach leaves
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 1 cup roasted red peppers, pureed
  • 1/2 cup heavy cream
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the pasta sheets according to package instructions until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Add garlic and sauté until fragrant. Add shrimp and cook until pink, then add spinach and cook until wilted.
  4. Remove the mixture from heat and let it cool slightly. In a bowl, combine shrimp mixture with ricotta, mozzarella, Parmesan, salt, and pepper.
  5. Lay a pasta sheet flat and place a generous amount of the shrimp and spinach filling at one end. Roll it up tightly and place seam-side down in a baking dish. Repeat for all sheets.
  6. Blend roasted red peppers with heavy cream until smooth. Pour over the prepared pasta rolls.
  7. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes until bubbly.
  8. Let it cool slightly before serving.

Notes

Make sure to season the shrimp mixture well with salt and pepper. Customize the filling by adding your favorite vegetables or replacing shrimp with chicken or tofu.
