Ingredients

- 1 slice thick-cut bread, toasted
- 1/2 ripe avocado, mashed
- 6–8 cooked shrimp (pan-seared or boiled)
- Dash of chili powder or paprika
- Salt, black pepper, and lime juice to taste
- 2 eggs, scrambled soft
- 4–6 slices of sausage (smoked or spicy chicken sausage)
- Olive oil or butter (for cooking)
Instructions
- Scramble the eggs low and slow with butter until they are soft and fluffy.
- Toast the bread until it’s nice and crispy. Layer it with the scrambled eggs, then top it with crispy sausage slices.
- Spread the mashed avocado on the second slice of toasted bread. Season with lime, salt, and pepper.
- Add warm shrimp on top and dust with chili powder or paprika.
- Optional: Drizzle hot honey over the sausage or sprinkle chili flakes over the shrimp.
- Garnish with chopped herbs or sesame seeds before serving.
Notes
Store leftover components separately in the fridge. Reheat eggs and sausage before assembling the toast again.
