- 8–10 cooked shrimp (peeled & deveined)
- 1 boiled egg, sliced
- 1 cup mixed lettuce (or arugula/romaine)
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 1/4 cup corn kernels
- Salt & black pepper to taste
- Olive oil & lemon juice for dressing
Instructions
- Arrange the lettuce in a bowl.
- Add shrimp, boiled egg slices, tomatoes, cucumber, and corn.
- Season with salt and pepper.
- Drizzle with olive oil and a squeeze of fresh lemon.
- Toss lightly and serve chilled.
