Ingredients

- 1 lb peeled and deveined shrimp
- 1 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp cumin
- Salt and black pepper to taste
- Juice of 1/2 lemon
- 1 ripe mango, diced
- 1/2 cucumber, diced
- Sliced avocado for serving
Instructions
- In a bowl, combine olive oil, paprika, garlic powder, cumin, salt, and pepper. Add shrimp and toss to coat evenly.
- Heat a skillet over medium heat and cook shrimp for about 2-3 minutes per side until they turn pink and are cooked through.
- For the mango-cucumber salsa, mix diced mango and cucumber in a separate bowl.
- Serve cooked shrimp on a bed of sliced avocado, topped with the mango-cucumber salsa and a squeeze of lemon juice.
Notes
Make sure not to overcook the shrimp. You can customize the salsa with red onion, bell peppers, or fresh herbs. Leftover shrimp and salsa should be stored separately.
