- 1 lb smoked sausage, sliced into rounds
- 2 cups Brussels sprouts, halved
- 2 apples, cored and sliced
- 1 1/2 cups baby carrots
- 2 tbsp olive oil
- 1 tbsp maple syrup or honey (optional glaze)
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- Salt & black pepper to taste
- Fresh thyme sprigs (for garnish)
Instructions
- Preheat your oven to 400°F (200°C). Line a sheet pan with parchment paper or use a cast iron skillet.
- In a large bowl, toss the sausage, Brussels sprouts, apples, and carrots with olive oil, maple syrup, and the seasonings.
- Spread the mixture evenly on the pan. Roast for 30–35 minutes, flipping halfway through, until the veggies are tender and the sausage is browned.
- Before serving, top with fresh thyme for a nice touch.
Notes
For best results, cut the vegetables to similar sizes for even cooking. You can add other vegetables like potatoes or bell peppers, and adjust the recipe using different sausages or fruits if desired.
