Description

Ingredients

  • 1.5 lbs chicken breast, sliced into strips
  • 3 bell peppers (red, yellow, green), sliced
  • 1 large red or yellow onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp fajita or taco seasoning
  • Salt & pepper, to taste
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)
  • Optional: tortillas, salsa, sour cream

Instructions

  1. Preheat the oven to 425°F (220°C) and line a sheet pan with parchment.
  2. Toss chicken, peppers, and onions with olive oil, seasoning, salt, and pepper.
  3. Spread the mixture evenly on the sheet pan and roast for 20–25 minutes, flipping halfway, until the chicken is cooked and the veggies are tender.
  4. Top with fresh cilantro and lime wedges.
  5. Serve as-is or in warm tortillas with your favorite toppings.

Notes

Cut the chicken and veggies into similar sizes for even cooking. Experiment with different vegetables for variety. For a spicier version, try adding jalapeños or using spicy seasoning.
