- 3 bell peppers (red, yellow, green), sliced
- 1 large red or yellow onion, sliced
- 2 tbsp olive oil
- 1 tbsp fajita or taco seasoning
- Salt & pepper, to taste
- Fresh cilantro, chopped (for garnish)
- Lime wedges (for serving)
- Optional: tortillas, salsa, sour cream
Instructions
- Preheat the oven to 425°F (220°C) and line a sheet pan with parchment.
- Toss chicken, peppers, and onions with olive oil, seasoning, salt, and pepper.
- Spread the mixture evenly on the sheet pan and roast for 20–25 minutes, flipping halfway, until the chicken is cooked and the veggies are tender.
- Top with fresh cilantro and lime wedges.
- Serve as-is or in warm tortillas with your favorite toppings.
Notes
Cut the chicken and veggies into similar sizes for even cooking. Experiment with different vegetables for variety. For a spicier version, try adding jalapeños or using spicy seasoning.
