Ingredients

  • 1 1/2 pounds sea scallops
  • Salt and freshly ground black pepper
  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Pat the scallops dry with paper towels. Season them with salt, pepper, and Cajun seasoning.
  2. Heat olive oil in a skillet over medium-high heat.
  3. Add the scallops to the skillet and sear for about 2-3 minutes on each side until golden brown and cooked through. Remove the scallops and set aside.
  4. In the same skillet, add heavy cream and Dijon mustard. Cook for a few minutes until the sauce thickens slightly.
  5. Stir in the chopped parsley.
  6. Plate the scallops and drizzle with the spicy Cajun cream sauce. Serve immediately.

Notes

Make sure to pat the scallops dry for a nice sear. Do not overcrowd the pan; cook in batches if necessary. Adjust Cajun seasoning to taste.
