- 1 1/2 pounds sea scallops
- Salt and freshly ground black pepper
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 tablespoon chopped fresh parsley
Instructions
- Pat the scallops dry with paper towels. Season them with salt, pepper, and Cajun seasoning.
- Heat olive oil in a skillet over medium-high heat.
- Add the scallops to the skillet and sear for about 2-3 minutes on each side until golden brown and cooked through. Remove the scallops and set aside.
- In the same skillet, add heavy cream and Dijon mustard. Cook for a few minutes until the sauce thickens slightly.
- Stir in the chopped parsley.
- Plate the scallops and drizzle with the spicy Cajun cream sauce. Serve immediately.
Notes
Make sure to pat the scallops dry for a nice sear. Do not overcrowd the pan; cook in batches if necessary. Adjust Cajun seasoning to taste.
