Ingredients

Scale
  • 4 large eggs
  • 2 tablespoons milk, cream, or half-and-half (optional)
  • 1/2 cup shredded cheese (cheddar, feta, parmesan, or your favorite)
  • 1 cup fresh spinach (sautéed)
  • Salt and pepper to taste
  • Butter or oil for cooking

Instructions

  1. In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  2. Heat butter or oil in a skillet over medium heat.
  3. Add the sautéed spinach and cook for 1-2 minutes until wilted.
  4. Pour in the egg mixture and gently stir with a spatula as it cooks.
  5. When the eggs are almost set, sprinkle the shredded cheese on top and continue cooking until the eggs are fully cooked and the cheese is melted.
  6. Serve warm.

Notes

Use fresh ingredients for the best flavor. Don’t overcook the eggs; they should be soft and slightly creamy.
