Instructions
- Take the fillet steaks out of the refrigerator and let them come to room temperature. Season both sides generously with salt and black pepper.
- Heat a skillet or grill pan over high heat and add olive oil.
- Once the oil is hot, place the fillet steaks in the pan. For medium-rare, cook for about 3-4 minutes on each side. Adjust the time based on your preferred doneness.
- During the last minute of cooking, add butter, fresh herbs, and garlic to the pan. Baste the steaks with the melted butter and herbs.
- Remove the steaks from the pan and let them rest for 5 minutes before slicing. Serve with your favorite sides.
