A delicious and nutritious meal combining sweet potatoes, ground turkey, and mushrooms, perfect for lunch or dinner.
Ingredients

- 1 large sweet potato
- 1 tsp olive oil (for baking or microwaving)
- Salt to taste
- 1/2 lb ground turkey
- 1/4 onion, diced
- 1 garlic clove, minced
- Salt & pepper to taste
- 1/4 tsp chili flakes (optional)
- 1/2 cup sliced mushrooms (button or cremini)
- 1 tsp olive oil
- Pinch of salt
- Dash of black pepper
Instructions
- Cook the sweet potato by either roasting it at 400°F for 45 minutes or microwaving it for 5-7 minutes until soft. Slice it open and mash it lightly.
- Sauté the diced onion and minced garlic in olive oil until fragrant. Add the ground turkey and cook until browned, seasoning with salt, pepper, and optional chili flakes.
- Sauté the sliced mushrooms in olive oil, adding a pinch of salt and a dash of black pepper until golden and tender.
- Layer the dish starting with the mashed sweet potato, then add the cooked ground turkey, and top with sautéed mushrooms. Serve hot.
Notes
Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat before serving.
