Ingredients

  • 1/2 avocado, sliced
  • 1 medium potato, cubed
  • 1 tbsp olive oil
  • Salt & black pepper to taste
  • Smoked paprika & garlic powder (for potatoes)
  • Hot sauce (optional, for drizzling)
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Toss cubed potatoes in olive oil, smoked paprika, garlic powder, salt, and black pepper until well coated.
  2. Air fry or roast the potatoes at 425°F until crispy and golden brown.
  3. While the potatoes are cooking, whisk the eggs in a bowl and scramble them in a pan over low heat for a fluffy texture.
  4. Once the eggs are cooked, gently add the avocado slices and season with a little salt.
  5. Plate the scrambled eggs, crispy potatoes, and avocado slices together, drizzling hot sauce on top if desired.
  6. Sprinkle chopped cilantro over everything before serving.

Notes

For extra flavor, add cheese to the eggs before finishing cooking. You can also customize with vegetables like bell peppers or spinach.
