- 1/2 avocado, sliced
- 1 medium potato, cubed
- 1 tbsp olive oil
- Salt & black pepper to taste
- Smoked paprika & garlic powder (for potatoes)
- Hot sauce (optional, for drizzling)
- Fresh cilantro, chopped (for garnish)
Instructions
- Toss cubed potatoes in olive oil, smoked paprika, garlic powder, salt, and black pepper until well coated.
- Air fry or roast the potatoes at 425°F until crispy and golden brown.
- While the potatoes are cooking, whisk the eggs in a bowl and scramble them in a pan over low heat for a fluffy texture.
- Once the eggs are cooked, gently add the avocado slices and season with a little salt.
- Plate the scrambled eggs, crispy potatoes, and avocado slices together, drizzling hot sauce on top if desired.
- Sprinkle chopped cilantro over everything before serving.
Notes
For extra flavor, add cheese to the eggs before finishing cooking. You can also customize with vegetables like bell peppers or spinach.
