Ingredients

  • 12 chicken sausages, sliced
  • 1 medium sweet potato, sliced into half moons
  • 1 zucchini, halved and sliced
  • 1 cup broccoli florets
  • 1 tbsp olive oil or avocado oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp soy sauce or coconut aminos
  • Salt and black pepper to taste
  • Optional: Dijon mustard drizzle or spicy honey glaze

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the sweet potato slices with olive oil, salt, pepper, and garlic powder. Roast them for 20–25 minutes until they are tender.
  2. In a hot skillet, add the sliced chicken sausage and cook until golden and slightly crisp.
  3. Add the zucchini and broccoli to the skillet with the sausage. Cook for 6–8 minutes, stirring until the veggies are tender but still vibrant.
  4. Sprinkle in the onion powder and add the soy sauce. Adjust the seasoning to taste. If you like, add a drizzle of spicy honey or Dijon mustard for extra flavor.
  5. Combine the roasted sweet potatoes with the skillet mixture. Serve warm and enjoy your meal!
