- 1–2 chicken sausages, sliced
- 1 medium sweet potato, sliced into half moons
- 1 zucchini, halved and sliced
- 1 cup broccoli florets
- 1 tbsp olive oil or avocado oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tbsp soy sauce or coconut aminos
- Salt and black pepper to taste
- Optional: Dijon mustard drizzle or spicy honey glaze
Instructions
- Preheat your oven to 400°F (200°C). Toss the sweet potato slices with olive oil, salt, pepper, and garlic powder. Roast them for 20–25 minutes until they are tender.
- In a hot skillet, add the sliced chicken sausage and cook until golden and slightly crisp.
- Add the zucchini and broccoli to the skillet with the sausage. Cook for 6–8 minutes, stirring until the veggies are tender but still vibrant.
- Sprinkle in the onion powder and add the soy sauce. Adjust the seasoning to taste. If you like, add a drizzle of spicy honey or Dijon mustard for extra flavor.
- Combine the roasted sweet potatoes with the skillet mixture. Serve warm and enjoy your meal!
