- 2 large eggs
- 1 1/4 cups milk
- 2 tbsp olive oil
- 1/4 tsp salt
- 1 cup cooked chicken, shredded
- 1 cup mushrooms, sliced
- 1/2 cup cheese (optional)
- Salt and pepper to taste
Instructions
- In a mixing bowl, whisk together flour, eggs, milk, olive oil, and salt until smooth. Let the batter rest for 30 minutes.
- Heat a non-stick skillet over medium heat. Pour a small amount of batter into the skillet and swirl to coat the bottom. Cook for 1-2 minutes until the edges lift, then flip and cook for another minute.
- In a separate pan, sauté mushrooms until tender. Add cooked chicken, salt, and pepper, and mix well.
- Fill each crepe with the chicken and mushroom mixture, sprinkle with cheese if desired, and roll or fold.
- Serve warm, garnished with herbs if you like.
