Ingredients

  • 1 small head of cauliflower, cut into florets
  • 1 large red onion, thinly sliced
  • 2 tbsp olive oil
  • Salt & black pepper, to taste
  • 4 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (e.g., cheddar or mozzarella)
  • Fresh basil, chopped
  • Fresh rosemary, chopped
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add the red onion and cauliflower florets, sauté until the vegetables are tender, about 5-7 minutes. Season with salt and black pepper.
  3. In a mixing bowl, whisk together the eggs and milk. Stir in the cheese, fresh basil, and rosemary.
  4. Place the pie crust in a pie dish, and spread the sautéed vegetables evenly on the crust.
  5. Pour the egg mixture over the vegetables.
  6. Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
  7. Let it cool for a few minutes before slicing and serving.
