Delicious quiche featuring mild cauliflower and sweet red onion, perfect for breakfast or brunch.
Ingredients

- 1 small head of cauliflower, cut into florets
- 1 large red onion, thinly sliced
- 2 tbsp olive oil
- Salt & black pepper, to taste
- 4 large eggs
- 1 cup milk
- 1 cup shredded cheese (e.g., cheddar or mozzarella)
- Fresh basil, chopped
- Fresh rosemary, chopped
- 1 pie crust (store-bought or homemade)
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add the red onion and cauliflower florets, sauté until the vegetables are tender, about 5-7 minutes. Season with salt and black pepper.
- In a mixing bowl, whisk together the eggs and milk. Stir in the cheese, fresh basil, and rosemary.
- Place the pie crust in a pie dish, and spread the sautéed vegetables evenly on the crust.
- Pour the egg mixture over the vegetables.
- Bake in the preheated oven for 30-35 minutes, or until the quiche is set and lightly golden on top.
- Let it cool for a few minutes before slicing and serving.
Notes
Pairs well with a side salad or fresh fruit. Store leftovers in an airtight container for 3-4 days or freeze for up to 2 months.
