Ingredients

- 1/2 cabbage (approximately 600g, finely shredded)
- 1 onion (finely chopped)
- 2 carrots (grated)
- A few sprigs of parsley (finely chopped, for garnish)
- 4 eggs
- 100g mozzarella cheese (cubed)
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat olive oil over medium heat.
- Add the chopped onion and sauté until translucent.
- Stir in the cabbage and carrots, cooking until they are softened.
- In a bowl, whisk the eggs and season with salt and pepper.
- Add the sautéed vegetables and mozzarella to the egg mixture.
- Pour the mixture back into the skillet and cook for a few minutes until the edges start to set.
- Transfer the skillet to the oven and bake for about 15-20 minutes until the frittata is fully set and golden.
- Garnish with chopped parsley before serving.
Notes
Can use other vegetables like bell peppers or spinach. Other cheeses can be substituted for mozzarella.
