Description

A delicious and simple frittata packed with flavor and nutrients, featuring cabbage, carrots, and creamy mozzarella.


Ingredients

  • 1/2 cabbage (approximately 600g, finely shredded)
  • 1 onion (finely chopped)
  • 2 carrots (grated)
  • A few sprigs of parsley (finely chopped, for garnish)
  • 4 eggs
  • 100g mozzarella cheese (cubed)
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat olive oil over medium heat.
  3. Add the chopped onion and sauté until translucent.
  4. Stir in the cabbage and carrots, cooking until they are softened.
  5. In a bowl, whisk the eggs and season with salt and pepper.
  6. Add the sautéed vegetables and mozzarella to the egg mixture.
  7. Pour the mixture back into the skillet and cook for a few minutes until the edges start to set.
  8. Transfer the skillet to the oven and bake for about 15-20 minutes until the frittata is fully set and golden.
  9. Garnish with chopped parsley before serving.

Notes

Can use other vegetables like bell peppers or spinach. Other cheeses can be substituted for mozzarella.
