- 2 Tbsp butter
- 1 medium yellow onion, chopped
- 8 oz white button mushrooms, stems trimmed and quartered
- 2 medium zucchinis, sliced
- Salt and pepper to taste
Instructions
- Heat the olive oil and butter in a skillet over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the mushrooms and cook until they are softened.
- Stir in the zucchini slices, season with salt and pepper, and sauté until they are tender, about 5-7 minutes.
- Serve warm.
