Ingredients

  • 1 cup broccoli florets
  • 1 cup mushrooms (sliced)
  • 1 cup sweet corn (fresh or frozen)
  • 1/2 cup baby corn (sliced lengthwise)
  • 1/2 cup carrots (julienned)
  • 1/2 cup bell peppers (green, orange, or red)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: garlic and herbs for seasoning

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add garlic if using and sauté for 1 minute.
  3. Add broccoli, mushrooms, sweet corn, baby corn, carrots, and bell peppers to the skillet.
  4. Sauté for about 5-7 minutes or until the vegetables are tender but still crisp.
  5. Season with salt and pepper to taste.
  6. Serve warm as a side dish or over rice.

Notes

Cut vegetables into similar sizes for even cooking. Feel free to add more vegetables or seasonings for variety.
