Ingredients

- 1 cup broccoli florets
- 1 cup mushrooms (sliced)
- 1 cup sweet corn (fresh or frozen)
- 1/2 cup baby corn (sliced lengthwise)
- 1/2 cup carrots (julienned)
- 1/2 cup bell peppers (green, orange, or red)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Optional: garlic and herbs for seasoning
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add garlic if using and sauté for 1 minute.
- Add broccoli, mushrooms, sweet corn, baby corn, carrots, and bell peppers to the skillet.
- Sauté for about 5-7 minutes or until the vegetables are tender but still crisp.
- Season with salt and pepper to taste.
- Serve warm as a side dish or over rice.
Notes
Cut vegetables into similar sizes for even cooking. Feel free to add more vegetables or seasonings for variety.
