Description

A quick and easy dish that combines tender chicken strips with fresh greens and juicy tomatoes, perfect for busy weeknights.


Ingredients

  • 1 lb boneless chicken breast, cut into strips
  • 1 tbsp olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt & black pepper, to taste
  • 2 cups fresh spinach or leafy greens
  • 1 large tomato, diced
  • Optional: squeeze of lemon juice or splash of soy sauce

Instructions

  1. Heat the olive oil in a skillet over medium heat. Once hot, add the chicken strips seasoned with smoked paprika, garlic powder, salt, and pepper. Cook until the chicken is juicy and golden brown.
  2. Once the chicken is mostly cooked, add the diced tomato to the skillet. Let it cook down until softened.
  3. Toss in the spinach and let it wilt down into the chicken and tomato mixture.
  4. Quickly toss everything together to soak up the chicken juices.
  5. Serve the dish your way, over rice, quinoa, or in tacos.

Notes

Cut chicken into thin strips for even cooking. You can add other vegetables like bell peppers or zucchini for extra flavor.
