  • 4 ripe bananas, mashed

  • 1/4 cup packed brown sugar (for glaze)
  • 2 tablespoons butter (for glaze)
  • 2 tablespoons heavy cream
  • 1/3 cup powdered sugar
  • 1/2 teaspoon kosher salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, cream together the brown sugar and butter until smooth.
  4. Beat in the eggs one at a time, then mix in the sour cream, mashed bananas, and vanilla.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour the batter into the prepared pan and bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean. Let it cool slightly.
  7. In a small saucepan, melt the brown sugar and butter over medium heat until it starts to boil. Cook for 1 minute, then remove from heat.
  8. Stir in the heavy cream, then mix in the powdered sugar and salt until smooth. Let it cool for 5 minutes.
  9. Drizzle the glaze over the warm banana bread. Slice, serve, and enjoy!

Ensure bananas are very ripe for the best flavor. Don’t overmix the batter to keep the bread tender. Use unsalted butter for the glaze to control saltiness. You can add nuts or chocolate chips for extra texture.
