Description

A delightful dessert combining creamy cheesecake with spiced apples, topped with crumble and drizzled with salted caramel.


Ingredients

  • 3 tbsp salted butter
  • 12 tbsp apple cider (or water)
  • 1/3 cup light brown sugar, packed
  • 1 1/4 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/8 tsp allspice
  • 12 tsp lemon juice
  • 2 tsp cornstarch
  • 2 tsp water
  • 3 cups cinnamon graham cracker crumbs
  • 1/2 cup + 3 tbsp salted butter, melted
  • 32 oz cream cheese, at room temperature
  • 1 1/2 cups granulated sugar
  • 4 large eggs, at room temperature
  • 1 cup full-fat sour cream
  • 2 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • 1/2 cup old-fashioned rolled oats
  • 1/4 cup brown sugar, packed
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 1 cup granulated sugar
  • 6 tbsp salted butter, cubed
  • 1/2 cup + 1 tbsp heavy cream
  • Pinch of flaky sea salt

Instructions

  1. Make the Apple Filling: In a medium pan, cook sliced apples with butter, apple cider, brown sugar, and spices until tender. Thicken if needed and let cool.
  2. Make the Crust: Preheat oven to 350°F. Combine graham cracker crumbs and melted butter; press into the bottom of a 9-inch springform pan. Bake for 10 minutes and set aside.
  3. Prepare the Cheesecake Filling: Beat cream cheese and sugar until creamy. Add eggs one at a time, mixing well. Stir in sour cream, vanilla, and spices. Pour half into the crust, add apple filling, and then top with remaining batter.
  4. Bake the Cheesecake: Place the cheesecake pan in a roasting pan; fill with boiling water. Bake at 350°F for 90 minutes. Cool in the oven for 1 hour.
  5. Chill the Cheesecake: Cool at room temperature for a bit, then refrigerate for 6-12 hours.
  6. Make the Apple Topping: Cook sliced apples with topping ingredients until tender. Let cool.
  7. Make the Crumble Topping: Mix flour, oats, brown sugar, cinnamon, and salt. Cut in butter until crumbly; bake at 350°F for 12-20 minutes until golden brown.
  8. Make the Salted Caramel Sauce: Melt sugar until golden, add butter and cream, mixing until smooth. Cool and add sea salt.
  9. Assemble the Cheesecake: Top cheesecake with apple topping, sprinkle crumble on top, and drizzle with salted caramel sauce.
  10. Serve & Enjoy: Slice and serve chilled or at room temp, optionally with whipped cream or vanilla ice cream.

Notes

For richer flavor, use Granny Smith apples. Store leftovers in the refrigerator for up to 5 days.
