- 1 can or cooked fillet of salmon
- 1 egg
- 2 tbsp breadcrumbs
- 2 tbsp chopped celery or green onion
- Salt
- Pepper
- Garlic powder
- 1 tbsp olive oil (for cooking)
- 2 large carrots, cut into sticks
- 1 tbsp olive oil (for carrot fries)
- 2 tbsp grated parmesan
- 1/4 tsp paprika
- 1 cup cherry tomatoes, halved
- 1/4 red onion, diced
- 2 tbsp chopped parsley
- 1 tbsp olive oil (for salad)
- 1 tsp balsamic vinegar
Instructions
- In a bowl, combine the salmon, egg, breadcrumbs, chopped celery, and seasonings. Form this mixture into a patty.
- Heat olive oil in a skillet and cook the patty until golden brown on both sides.
- Toss the carrot sticks with oil, parmesan cheese, and paprika. Spread them on a baking sheet and roast in a preheated oven at 425°F for about 20–25 minutes until they are crispy.
- In a bowl, combine the halved cherry tomatoes, diced red onion, chopped parsley, olive oil, balsamic vinegar, and a pinch of salt and pepper. Mix well.
- Place the golden salmon cake next to the crispy carrot fries and salad on a plate. Top the salmon cake with a dollop of Greek yogurt or tartar sauce.

Notes
Store leftovers separately in airtight containers in the fridge for up to 2 days. Reheat the salmon cake and carrot fries in the oven for the best texture.
