A hearty stew perfect for outdoor gatherings, packed with ground beef and fresh vegetables.
Ingredients

- 1 lb ground beef
- 1 tbsp olive oil (if needed)
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 medium potatoes, peeled and cubed
- 1 cup sliced carrots
- 1/2 cup green beans, chopped
- 1/2 cup peas
- 1/2 cup corn kernels
- 1 can (15 oz) diced tomatoes
- 3 cups beef broth
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- Salt & black pepper, to taste
Instructions
- In a large pot or Dutch oven, brown the ground beef. Drain excess fat if necessary.
- Add onions and garlic; sauté until soft.
- Stir in potatoes, carrots, green beans, corn, and peas.
- Add diced tomatoes, beef broth, and seasonings. Bring to a boil.
- Reduce heat and simmer covered for 30–40 minutes or until potatoes are tender.
- Uncover and simmer for 10 more minutes to thicken slightly. Adjust seasoning to taste.
Notes
Feel free to mix and match vegetables. Add a splash of red wine for richer flavor. Leftovers can be stored in the refrigerator for up to 3 days.
