Description

A hearty stew perfect for outdoor gatherings, packed with ground beef and fresh vegetables.


Ingredients

  • 1 lb ground beef
  • 1 tbsp olive oil (if needed)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and cubed
  • 1 cup sliced carrots
  • 1/2 cup green beans, chopped
  • 1/2 cup peas
  • 1/2 cup corn kernels
  • 1 can (15 oz) diced tomatoes
  • 3 cups beef broth
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • Salt & black pepper, to taste

Instructions

  1. In a large pot or Dutch oven, brown the ground beef. Drain excess fat if necessary.
  2. Add onions and garlic; sauté until soft.
  3. Stir in potatoes, carrots, green beans, corn, and peas.
  4. Add diced tomatoes, beef broth, and seasonings. Bring to a boil.
  5. Reduce heat and simmer covered for 30–40 minutes or until potatoes are tender.
  6. Uncover and simmer for 10 more minutes to thicken slightly. Adjust seasoning to taste.

Notes

Feel free to mix and match vegetables. Add a splash of red wine for richer flavor. Leftovers can be stored in the refrigerator for up to 3 days.
