  • 4 cups whole milk

  • 6 large egg yolks
  • 1/2 cup all-purpose flour (for custard)
  • 1/2 cup cornstarch
  • 1/2 cup unsalted butter, softened
  • 2 teaspoons vanilla extract
  • White chocolate shavings (for decoration)
  • Whole walnuts (for decoration)

Instructions

  1. Prepare the Cake Layers: In a large bowl, combine the flour and salt. Add the cold butter and cut it into the flour until it resembles coarse crumbs. Mix cold water and vinegar together, then gradually add to the flour mixture until the dough forms. Shape the dough into 8 balls, flatten them slightly, wrap in plastic, and refrigerate for at least 1 hour.
  2. Bake the Cake Layers: Preheat the oven to 400°F (200°C). Roll out each dough ball into a thin circle and place on a parchment-lined baking sheet. Prick with a fork and bake for 8-10 minutes until golden brown. Cool completely.
  3. Prepare the Custard Cream: Heat the milk in a saucepan until it simmers. In a bowl, whisk together sugar, egg yolks, flour, and cornstarch. Gradually whisk in the hot milk, then return the mixture to the saucepan and cook until it thickens. Stir in butter and vanilla, then let it cool.
  4. Assemble the Cake: On a serving plate, place one cake layer and spread custard cream over it. Repeat this with the remaining layers, finishing with custard on top. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  5. Decorate the Cake: Before serving, sprinkle the top with white chocolate shavings and place walnuts at each corner.

Notes

Ensure your butter is cold for the best flaky layers. Use a sharp knife to slice for clean layers.
