- 1 lb rigatoni pasta (or your favorite shape)
- 1 lb ground beef
- 1 can (10 oz) Rotel diced tomatoes and green chilies, undrained
- 1 block (8 oz) cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet, brown ground beef. Drain excess fat.
- Add Rotel tomatoes, cream cheese, garlic powder, onion powder, salt, and pepper to the beef. Stir until melted and creamy.
- Toss in the cooked pasta. Add shredded cheddar and Monterey Jack cheeses. Stir until everything is coated and melty.
- Garnish with chopped fresh cilantro and serve hot!
Notes
To save time, cook the pasta while browning the beef. Feel free to adjust spices and try different cheese or vegetables for variations.
