Description

Deliciously soft and gooey cookies filled with chocolate, crunchy nuts, and fluffy marshmallows.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 stick butter (room temperature)
  • 2 oz dark chocolate bar (chopped and melted)
  • 2/3 cup dark brown sugar
  • 1/3 cup granulated sugar
  • 1 large egg + 1 yolk
  • 1 cup dark chocolate chips
  • 12 regular Campfire Marshmallows

Instructions

  1. In a medium bowl, combine all the dry ingredients: flour, cocoa powder, baking powder, and salt.
  2. In a separate bowl, beat together the softened butter, melted chocolate, dark brown sugar, and granulated sugar until smooth.
  3. Beat in the large egg and egg yolk until combined.
  4. Gradually add the dry ingredients in thirds, mixing gently after each addition. Be careful not to overmix the batter.
  5. Stir in the dark chocolate chips until well mixed.
  6. Form 6 giant cookie balls and place 2 Campfire marshmallows inside each ball, ensuring the dough fully covers the marshmallows.
  7. Preheat the oven to 350°F (175°C) and line 2 cookie sheets with parchment paper or silicone mats. Place no more than 3 cookie balls on each sheet.
  8. Bake the cookies for 15-18 minutes, until the edges are crispy and the tops remain soft.
  9. Allow the cookies to set for a few minutes before removing from the sheet.

Notes

Serve warm with a scoop of ice cream or drizzle chocolate syrup on top.
