Delightful cookies stuffed with gooey marshmallows, chocolate, and nuts, perfect for any sweet tooth.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup (1/2 stick) butter (room temperature)
- 2 oz dark chocolate bar (chopped up and melted)
- 2/3 cup dark brown sugar
- 1/3 cup granulated sugar
- 1 large egg + 1 yolk
- 1 cup dark chocolate chips
- 12 regular Campfire Marshmallows
Instructions
- In a medium bowl, combine all the dry ingredients: flour, cocoa powder, baking powder, and salt.
- In a separate bowl, beat together the butter, melted chocolate, brown sugar, and granulated sugar until smooth. Then, beat in the egg and yolk.
- Add the dry ingredients in thirds, mixing gently between each addition. Be careful not to overmix the batter.
- Stir in the dark chocolate chips until combined.
- Form 6 giant cookie balls and place 2 Campfire marshmallows in each one. Make sure the dough fully covers the marshmallows.
- Preheat the oven to 350°F (175°C) and line 2 cookie sheets with parchment paper or silicone mats. Place no more than 3 cookies on each sheet.
- Bake for 15-18 minutes. The edges should be crispy, and the tops soft.
- Allow the cookies to set before removing them from the sheet.
Notes
Serve warm for an ooey-gooey center. Store in an airtight container for 3-5 days or freeze for up to 3 months.
