A delightful treat combining dark chocolate, creamy pudding, and crunchy hazelnut for a perfect dessert.
Ingredients

- 100 g dark chocolate
- 500 ml milk
- 1 tbsp baking cocoa
- 3 tbsp sugar
- 2 tbsp cornstarch
- 12 Rocher balls
- 400 g cream
- 2 packs of cream stiffener
- 1 pack of vanilla sugar
- 1 – 2 tbsp hazelnut brittle
Instructions
- Roughly chop the dark chocolate. Heat the milk in a saucepan. In a small bowl, mix 2 tbsp of milk with baking cocoa, sugar, and cornstarch.
- Add the chopped chocolate to the saucepan and let it melt while stirring. Once melted, raise the heat to boil briefly, then let it simmer for 1 minute.
- Add the chocolate-sugar-milk mixture to the saucepan and stir well until it thickens. If needed, return to heat until pudding-like consistency is reached.
- Transfer the pudding to a bowl, cover with cling film, and let it cool completely. Chill in the fridge for another 30 minutes.
- Chop 9 Rocher balls and keep 3 in the fridge. Beat cream, cream stiffener, and vanilla sugar until stiff peaks form.
- Stir cooled pudding, then fold in 150 g of whipped cream until smooth. Fill a piping bag with the pudding mixture.
- Pipe pudding into prepared glasses, top with whipped cream, and sprinkle hazelnut brittle. Optionally, add a whole Rocher ball on top.
Notes
For best results, use chilled equipment for whipping cream. You can customize with orange zest or coffee for added flavor.
