- 2 large sweet potatoes, peeled and cut into 1/2-inch rounds
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 1/2 cup crumbled feta cheese
- 3 tablespoons honey
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Arrange sweet potato rounds on the sheet and brush with olive oil. Sprinkle evenly with salt, black pepper, and smoked paprika.
- Roast for 25–30 minutes, flipping halfway through, until the sweet potatoes are golden and tender.
- Remove from the oven, drizzle with honey, and sprinkle with crumbled feta cheese.
- Garnish with fresh parsley and serve warm.
Notes
Ensure to cut the sweet potatoes evenly for consistent cooking. For a spicier kick, add chili powder or red pepper flakes.
