Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into round slices about 1/4 inch thick.
- In a large bowl, toss the sweet potato rounds with olive oil, cinnamon, smoked paprika, ground cumin, salt, and pepper until evenly coated.
- Spread the sweet potato rounds in a single layer on a baking sheet lined with parchment paper.
- Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the sweet potatoes are tender and golden brown.
- Once roasted, drizzle with honey and sprinkle with crumbled feta cheese.
- Serve warm.
