- 4 boneless, skinless chicken breasts
- 1 cup roasted red peppers, chopped
- 1 cup fresh spinach, chopped
- 1 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the roasted red peppers, spinach, mozzarella, and garlic until combined.
- Cut a pocket in each chicken breast. Be careful not to cut all the way through.
- Stuff each chicken breast with the pepper and spinach mixture.
- Season the chicken with salt and pepper to taste.
- Place the stuffed chicken breasts in a baking dish.
- Bake for 25-30 minutes or until the chicken is cooked through and no longer pink in the center.
- Serve hot and enjoy!
