Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 1 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix the roasted red peppers, spinach, mozzarella, and garlic until combined.
  3. Cut a pocket in each chicken breast. Be careful not to cut all the way through.
  4. Stuff each chicken breast with the pepper and spinach mixture.
  5. Season the chicken with salt and pepper to taste.
  6. Place the stuffed chicken breasts in a baking dish.
  7. Bake for 25-30 minutes or until the chicken is cooked through and no longer pink in the center.
