Description

A delicious and healthy dinner option featuring tender chicken breasts stuffed with spinach, roasted red peppers, and mozzarella cheese.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup shredded mozzarella cheese
  • 1/2 cup roasted red peppers, chopped
  • 2 cups fresh spinach
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1/2 tsp Italian seasoning
  • Salt & pepper to taste
  • Fresh parsley and red pepper flakes (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté the spinach with garlic in olive oil until the spinach is wilted. Then mix in the chopped roasted red peppers and mozzarella cheese.
  3. Take each chicken breast and slice a pocket into the side. Stuff each chicken breast with the spinach, red pepper, and cheese mixture.
  4. Season the outside of the chicken with salt, pepper, and Italian seasoning.
  5. In a hot skillet, sear the stuffed chicken until golden brown.
  6. Transfer the skillet to the oven and bake for 18-20 minutes, or until the chicken is cooked through.
  7. Drizzle some pan juices or a quick garlic butter sauce over the chicken and garnish with freshly chopped parsley and red pepper flakes.

Notes

For extra flavor, you can add grated Parmesan cheese to the stuffing mix. Ensure not to overstuff the chicken to prevent filling from spilling out.
