Ingredients

  • 12 large baking potatoes, washed and cubed
  • 7 oz (200 g) block of feta cheese
  • 2 tablespoons olive oil, divided
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine the cubed potatoes, 1 tablespoon of olive oil, thyme, oregano, garlic, salt, and pepper.
  3. Place the feta cheese in the center of the potatoes.
  4. Drizzle the remaining tablespoon of olive oil over everything.
  5. Bake for about 30-35 minutes or until the potatoes are tender and golden brown, and the feta is soft and slightly browned.
  6. Serve warm.

Notes

For extra crispy potatoes, avoid overcrowding the baking dish. Customize with your favorite herbs or spices.
