- 1–2 large baking potatoes, washed and cubed
- 7 oz (200 g) block of feta cheese
- 2 tablespoons olive oil, divided
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 4 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, combine the cubed potatoes, 1 tablespoon of olive oil, thyme, oregano, garlic, salt, and pepper.
- Place the feta cheese in the center of the potatoes.
- Drizzle the remaining tablespoon of olive oil over everything.
- Bake for about 30-35 minutes or until the potatoes are tender and golden brown, and the feta is soft and slightly browned.
- Serve warm.
Notes
For extra crispy potatoes, avoid overcrowding the baking dish. Customize with your favorite herbs or spices.
