A delightful dish that combines roasted potatoes and baked feta cheese, seasoned with thyme and oregano.

- 1–2 large baking potatoes, washed and cubed
- 7 oz (200 g) block of feta cheese
- 2 tablespoons olive oil, divided
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, toss the cubed potatoes with 1 tablespoon of olive oil, thyme, and oregano. Spread them in an even layer.
- Place the block of feta in the center of the potatoes and drizzle with the remaining tablespoon of olive oil.
- Bake for about 30-35 minutes, or until the potatoes are golden and tender, and the feta is soft and starting to brown.
- Serve warm, mixing the feta with the potatoes and adjusting seasonings to taste.
Notes
For added flavor, consider adding cherry tomatoes or olives to the baking dish.
