Description

A delightful dish that combines roasted potatoes and baked feta cheese, seasoned with thyme and oregano.


Ingredients

  • 12 large baking potatoes, washed and cubed
  • 7 oz (200 g) block of feta cheese
  • 2 tablespoons olive oil, divided
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, toss the cubed potatoes with 1 tablespoon of olive oil, thyme, and oregano. Spread them in an even layer.
  3. Place the block of feta in the center of the potatoes and drizzle with the remaining tablespoon of olive oil.
  4. Bake for about 30-35 minutes, or until the potatoes are golden and tender, and the feta is soft and starting to brown.
  5. Serve warm, mixing the feta with the potatoes and adjusting seasonings to taste.

Notes

For added flavor, consider adding cherry tomatoes or olives to the baking dish.
