- 2 yellow bell peppers, sliced

- 1 cup artichokes, chopped

Instructions
- Preheat the oven to 400°F (200°C).
- Toss the sliced peppers, onion, garlic, artichokes, and olives in a large bowl with olive oil, salt, and pepper.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the preheated oven for about 25-30 minutes or until the vegetables are tender and slightly caramelized.
- Remove from the oven and drizzle with lemon juice before serving.
