Ingredients

- 4 medium beets, peeled
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 cup fresh dill, chopped
- 1 tbsp apple cider vinegar
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the beets thinly, but not all the way through, to create a Hasselback effect.
- Place the beets on a baking sheet and drizzle with olive oil, salt, black pepper, and garlic powder.
- Roast in the oven for 45-60 minutes, until tender.
- Meanwhile, prepare the dill dressing by mixing chopped dill with apple cider vinegar and a bit more olive oil if desired.
- Serve the roasted beets warm, drizzled with the dill dressing.
Notes
Slice the beets carefully to avoid cutting all the way through. Adjust seasoning to taste.
