Ingredients

  • 4 medium beets, peeled
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 cup fresh dill, chopped
  • 1 tbsp apple cider vinegar

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the beets thinly, but not all the way through, to create a Hasselback effect.
  3. Place the beets on a baking sheet and drizzle with olive oil, salt, black pepper, and garlic powder.
  4. Roast in the oven for 45-60 minutes, until tender.
  5. Meanwhile, prepare the dill dressing by mixing chopped dill with apple cider vinegar and a bit more olive oil if desired.
  6. Serve the roasted beets warm, drizzled with the dill dressing.

Notes

Slice the beets carefully to avoid cutting all the way through. Adjust seasoning to taste.
