Ingredients

- 1 head cauliflower, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 3 cups vegetable broth
- 1/2 cup cream or milk
- Salt and pepper to taste
Instructions
- Toss the cauliflower, garlic, and onion in olive oil until well coated.
- Spread them on a baking sheet and roast at 200°C (about 392°F) for 25 minutes until tender and slightly browned.
- After roasting, transfer the vegetables to a blender.
- Add the vegetable broth and blend until smooth.
- Stir in the cream or milk and season with salt and pepper to taste.
- Serve hot in bowls, garnished with fresh herbs, croutons, or a drizzle of olive oil.
Notes
Roast the cauliflower until golden brown for the best flavor. Feel free to adjust the cream or milk for desired creaminess. You can add spices like cumin or paprika for variation.
