- 1 large head of cauliflower, leaves removed
- 3 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp smoked paprika (optional)
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1 cup mushrooms, sliced
- 1 cup Gruyere cheese, shredded
- 1 cup heavy cream
- 2 tbsp butter
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the cauliflower head with olive oil, salt, pepper, smoked paprika (if using), garlic powder, and onion powder.
- Place the seasoned cauliflower on a baking sheet and roast for about 30-40 minutes, or until tender and golden brown.
- While the cauliflower is roasting, melt butter in a skillet over medium heat. Add sliced mushrooms and sauté until they’re soft and browned.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the Gruyere cheese until melted and smooth.
- Once the cauliflower is done, remove it from the oven and drizzle the creamy mushroom sauce over the top. Serve warm.
Notes
For the best flavor, roast the cauliflower until it’s nicely browned. Customize the flavors by adding different spices or herbs.
