Ingredients

  • 4 carrots, chopped
  • 1 small onion
  • 1 teaspoon fresh ginger, grated
  • 2 tablespoons olive oil
  • 2 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (about 400°F).
  2. In a large bowl, toss the chopped carrots, onion, and grated ginger with the olive oil until well coated.
  3. Spread the mixture on a baking sheet and roast for 25 minutes or until the carrots are tender and slightly caramelized.
  4. Transfer the roasted mixture to a blender, add the vegetable broth, and blend until smooth.
  5. Season the soup with salt and pepper to taste. If it’s too thick, add more broth or water as needed.

Serve hot, garnished with olive oil or fresh herbs. Pairs well with crusty bread or a salad.
