Ingredients

- 3 medium carrots, peeled and cut into sticks or rounds
- 2 medium beets, peeled and cut into wedges or cubes
- 2 tbsp olive oil
- 1/2 tsp salt
- 2 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 1/4 tsp black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the carrots and beets with olive oil, salt, and black pepper.
- Spread the vegetables on a baking sheet in a single layer.
- Roast for 25-30 minutes, or until tender and caramelized, stirring halfway through.
- In a small bowl, whisk together maple syrup and apple cider vinegar.
- Drizzle the vinaigrette over the roasted vegetables before serving.
Notes
Serve warm, optionally garnished with fresh herbs. Pairs well with grilled meats or as part of a vegetarian meal.
