Description

A bright and flavorful salad featuring roasted beets, sweet potatoes, and creamy feta, dressed with a tangy yogurt sauce.


Ingredients

  • 2 medium beets, peeled and cut into cubes
  • 2 medium sweet potatoes, peeled and cut into cubes
  • 2 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup plain yogurt
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the cubed beets and sweet potatoes with olive oil, ground cumin, salt, and pepper. Spread them on a baking sheet.
  3. Roast in the preheated oven for 25-30 minutes or until tender and slightly caramelized.
  4. In a small bowl, mix yogurt, lemon juice, salt, and pepper to make the dressing.
  5. Once the vegetables are roasted, let them cool slightly.
  6. In a large bowl, combine the roasted beets and sweet potatoes, crumbled feta, and drizzle with the yogurt dressing.
  7. Toss gently to combine and serve.

Notes

Serve warm or at room temperature. Pairs well with grilled meats or as a standalone dish. Store leftovers in an airtight container in the fridge for up to 3 days.
