A bright and flavorful salad featuring roasted beets, sweet potatoes, and creamy feta, dressed with a tangy yogurt sauce.
Ingredients

- 2 medium beets, peeled and cut into cubes
- 2 medium sweet potatoes, peeled and cut into cubes
- 2 tbsp olive oil
- 1/2 tsp ground cumin
- 1/2 cup feta cheese, crumbled
- 1/2 cup plain yogurt
- 1 tbsp lemon juice
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed beets and sweet potatoes with olive oil, ground cumin, salt, and pepper. Spread them on a baking sheet.
- Roast in the preheated oven for 25-30 minutes or until tender and slightly caramelized.
- In a small bowl, mix yogurt, lemon juice, salt, and pepper to make the dressing.
- Once the vegetables are roasted, let them cool slightly.
- In a large bowl, combine the roasted beets and sweet potatoes, crumbled feta, and drizzle with the yogurt dressing.
- Toss gently to combine and serve.
Notes
Serve warm or at room temperature. Pairs well with grilled meats or as a standalone dish. Store leftovers in an airtight container in the fridge for up to 3 days.
