- 2 medium sweet potatoes, peeled & cubed
- 1 tbsp olive oil
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the cubed beets and sweet potatoes with olive oil, ground cumin, and smoked paprika in a bowl.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the oven for 25-30 minutes, or until tender and slightly caramelized, stirring halfway through.
