A stunning appetizer combining roasted beets and creamy blue cheese, perfect for entertaining or a cozy meal at home.
Ingredients

- 3 large beets (red or golden), peeled and sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 oz blue cheese, softened
- 3 tablespoons Greek yogurt or sour cream
- 1 tablespoon honey
- 1/2 teaspoon Dijon mustard
- 1/4 cup chopped toasted walnuts
- Fresh thyme leaves for garnish
- Microgreens or arugula for serving (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss the beet slices with olive oil, salt, and pepper until they are well coated.
- Arrange the beet slices in a single layer on the baking sheet and roast for 20–25 minutes. Flip them halfway through cooking. The beets should be tender and slightly caramelized when done. Let them cool.
- In a small bowl, mix the blue cheese, Greek yogurt (or sour cream), honey, and Dijon mustard together until the mixture is creamy and smooth.
- To assemble the towers, start with one beet slice at the bottom. Spread a spoonful of the blue cheese mixture on top, then continue layering with 2-3 more beet slices and cheese mixture, finishing with a generous dollop of the cheese mixture on top.
- Garnish with chopped toasted walnuts, fresh thyme leaves, and a drizzle of honey if desired.
- Serve on a bed of microgreens or arugula for an extra touch.
Notes
You can roast the beets a day ahead and store them in the fridge until you’re ready to assemble the towers. For a vegan option, substitute the blue cheese with a plant-based cheese.
