Description
A delicious and healthy side dish featuring roasted asparagus and carrots that are tender and slightly caramelized.
Ingredients

- 1 bunch of asparagus, trimmed (about 1 lb or 450g)
- 4–5 medium carrots, peeled and sliced diagonally
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon dried thyme (or rosemary)
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the asparagus, carrots, olive oil, minced garlic, thyme (or rosemary), salt, and pepper.
- Toss to coat the vegetables evenly.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the preheated oven for about 20-25 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
- Remove from the oven and serve warm.
Notes
For extra flavor, try adding a pinch of red pepper flakes. Can be served as a side dish or added to grain dishes for a vegetarian meal.
